Remember that, initially, judging will be based upon your written entry, so ensure that the method and description are given in FULL DETAIL.

When considering your entry, bear in mind that there is a big difference between a dish description and the actual dish served.  Consider flavours and make sure that they do not clash.  Your entry will be judged as a balanced whole, and care must be taken over every aspect.  We want to encourage innovation, so don't be restricted by convention.  Original dishes will be looked upon favourably, but where classic dishes are included, they must be prepared in the classic manner.

Past winners have said how important it was to practise before submitting their recipe - candidates are advised to cook their dish 3-4 times before the regional finals and ask their chef or senior colleague to taste and criticise.
