Eugene Callaghan is Executive Chef of La Marine Restaurant. He joined Kelly’s Resort Hotel in 1996 for the opening of “La Marine”.

Acclaimed by many food critics including: Tom Doorley, John McKenna and Mary Dowey.

Eugene is a graduate of The Waterford Institute of Technology and has gained international experience in Belgium, Switzerland and France. He worked at Roscoff’s in Belfast with Paul Rankin, where he was when he won The Roux Scholarship in 1991. This gave him the unique opportunity of training with Jacques Lameloise at Lameloise in France.
