Armand Sablon

Armand Sablon - our 2007 Scholar - worked in the brigade of Scholar Andre Garrett at Galvin at Windows in the London Hilton on Park Lane.

He trained at Auberge de l'Ill in Alsace. One of the finest restaurants in Eastern France, the Auberge de L’Ill,  Illhaeusern, is owned and run by the Haeberlin family, and has been for more than 150 years.

Armand is now Head chef at Bistro K, South Kensington in London. Armand has worked together with a team of chefs at Bistro K to create a menu of traditional bistro-style food with a deluxe feel.

Armand Sablon was the second Roux Scholar to come from the brigade of another Scholar: the other is Matt Tomkinson who was working in Martin Hadden's brigade at Ockenden Manor when he won. Andre Garrett visited Auberge de L’Ill himself and thoroughly approved of Sablon’s choice of stage: “It is somewhere quite classical with a large brigade, where he will see something different from the operation here at Galvin at Windows or Orrery, where we previously worked together.”

Despite having a French name and parentage, Armand spoke “rusty” French, so the Scholarship has provided him with an intensive refresher course through BS Interlenguas, in South Molton Street. The company prepared a bespoke one-to-one course, with strong emphasis on vocabulary needed in a professional French kitchen, so that he can make the very most of the unique training opportunity he is being given.
