Simon Hulstone
Simon Hulstone is not only a Roux Scholar but, to date, he is the only British chef to win gold at the World Chef Championships in France.
Simon is head chef at The Elephant in Torquay, which has held a Michelin star since 2006. The Elephant also has three AA rosettes.
Simon has secured a place in the final of the Bocuse d'Or culinary competition. Hulstone together with his commis chef Jordan Bailey finished in fourth position at the European finals of the Bocuse d'Or, which were held in Geneva on 7 and 8 June. Representing the UK, he is one of just 12 chefs from around the world to have qualified for the main event, which will be held in Lyon in January 2011.
At The Elephant, where style is relaxed, Simon serves dishes such as Breast of Organic Crediton Duckling with a Red Wine Braised Turnip & Pomme Mousseline. In fact he is running two separate restaurants under one roof at The Elephant: an informal 60 cover brasserie and the award-winng 24 cover Room Restaurant.
Hulstone, is married to Katy and they have two daughters. He won the Roux Scholarship in 2003, and says of the award: "It is absolutely fantastic and it showed me what a difference the right produce can make." He trained in Spain (the first Roux Scholar to do so) at Marin Berasategui, and he took the opportunity to visit 17 Michelin starred restaurants in Spain during his three month stage.
