Being a Roux Scholar has meant so much to me: winning was a highlight of my career and it came at just the right time for me. I knew I was a very good cook but it gave me extra confidence and put me in a spotlight in the industry. The stage at Guy Savoy was a great experience, and being a Roux Scholar I was intergrated into the team. Well, now I am part of a family of past scholars and they are all good friends.
Galvin at Windows is a good move for me- to be in the spotlight once more and cook at such a beautiful restaurant. It gives me the chance to develop a whole restaurant from scratch with Chis Galvin and I'm sure will be a good learning expirence.
