Andrew is now Executive Chef at the Westbury Hotel in Mayfair.
He says: " Since winning the Roux Scholarship my career has gone from strength to strength!
I consider myself to be in a very strong position at this stage in my career. Claridge's, where I was when I won, is renowned throughout the world for its exceptional high standards of food and service. As Premier Sous Chef it was my responsibility to maintain and improve on these high standards that had been set by my predecessors over the last century.
Having won the Scholarship (after three attempts) it was a real highlight in my career. My stage with Michel Bras at his restaurant in Laguiole was invigorating I was constantly learning and honing my culinary skills. On my return to Claridge's I was brimming with enthusiasm to demonstrate what I had learned and to embellish it with my own style.
Many dishes that featured on the menus at Claridges had a feel for what I learnt during my three month’s stage in Aubrac
I feel that it is a great honour to be able to call myself a Roux scholar and be associated with everything that it stands for. "
