Brothers Ian and Neil Udale are the fourth generation of their family to own the business, which was founded in 1905 by their great grandfather Joe.

Udale Speciality Foods specialises in supplying a wide range of meat, poultry and speciality foods to the catering trade and sources the highest quality beef, lamb and pork sourced from the Northern Fells and Lake District, and farms throughout Lancashire, Cumbria and Yorkshire. Their meats are dry-aged for a minimum of 28 days in their salt chamber, which is constructed from 1800 Himalayan Salt Bricks. The controlled atmosphere inside the chamber results in a fantastic concentration of flavour in their beef, lamb and pork, which is prized by chefs working in some of the country’s best hotels and fine dining restaurants and at large sporting events.

Udale have been working with the Roux family since 2000 and are proud to sponsor the highly respected Roux Scholarship. Our ethos shares the Roux passion for excellence and quality.
