New book celebrates the Roux Scholars’ trip to Mexico

It was the trip of a lifetime, the chance to discover the food culture, dishes and ingredients, and to meet the chefs and food producers, of the YucatĂĄn Peninsula and Mexico City and now a new book celebrating the latest of The Roux Scholarship’s educational tours is available to read. The trip took place in November 2025, when 11 Roux Scholars and Chairmen Alain Roux and Michel Roux Jr, along with photographer Jodi Hinds and the Scholarship’s Communications Manager Carolyn Boyd, embarked on a non-stop itinerary. Starting in MĂ©rida with a meal at Tulis, the trip then saw the group cook venison in an underground pit oven in Izamal, share tamales with Mayan villagers in Granada and admire flamingos at CelestĂșn. Then it was on to Mexico City, where the group was joined by SofĂ­a HernandĂ©z from Jamat Seafoods (who helped coordinate this part of the trip) and they explored the bakeries including Green Rhino, dined at two-star Michelin restaurants Quintonil and Pujol, learned about tequila and tacos at Maizajo and enjoyed an extraordinary sunrise at the chinampas with Arca Tierra.

Each entry in the book was written by a different Roux Scholar, with the superb photographs from Jodi Hinds. The project was coordinated and edited by Carolyn Boyd, and designed by Lounge Design.
