Oli Williamson returns from his stage at Zén
Roux Scholarship 2020/21 winner Oli Williamson has returned from his star prize stage at Zén in Singapore. Swedish chef Bjorn Frantzén opened the restaurant in November 2018, and it was awarded three Michelin stars in 2021. Just over a month later, Oli won the Roux Scholarship and, as he had long been keen to learn about South-East Asian cuisine, the newly awarded restaurant provided the ideal opportunity.
The restaurant, which has just 24 covers, spans three floors in a classic shophouse building in downtown Singapore. Oli worked closely with Executive Chef Tristin Farmer in the kitchen, but also did shifts in Front of House, as all chefs are expected to do. It is style familiar to fellow Roux Scholar Spencer Metzger, who did his stage at Frantzén in Stockholm.
