For more than two centuries, Billecart-Salmon has occupied a distinctive place in the world of fine gastronomy. Founded in 1818 in Mareuil-sur-Ay, the House has built its reputation on precision, elegance, balance and an uncompromising commitment to craftsmanship.

Its history runs in parallel with the evolution of fine dining, from the classical foundations of Escoffier to the modern expressions of chefs such as Alain Roux, Anne-Sophie Pic and Alain Passard. Today, Billecart-Salmon is proud to be served in the restaurants of former Roux Scholarship winners, including Mark Birchall at Moor Hall and Adam Smith at Woven, as well as at Core by Clare Smyth and Helene Darroze at The Connaught.

The connection extends internationally. Mauro Colagreco, Honorary President of Judges for the 2026 Roux Scholarship final, has also represented Billecart-Salmon as global ambassador for the House’s prestige cuvee, Nicolas-Francois Billecart 2008.

For Billecart-Salmon, supporting The Roux Scholarship represents far more than an association with exceptional chefs. It reflects a shared belief that excellence is cultivated, challenged and passed from one generation to the next - a philosophy that has guided the House for more than 200 years and continues to shape the future of gastronomy.
